Easy Coconut Baobab Bites

Delicious and easy to make coconut baobab bites with baobab fruit powder, desiccated coconut, cashews, honey and lemon zest. Quick recipe for best yummy bites.

INGREDIENTS 

  • 1.5 cup cashew
  • 2 cup desiccated coconut
  • ½ cup baobab fruit pulp powder
  • ¾ cup coconut milk
  • ½ cup honey
  • 1 tsp lemon zest
  • ½ tsp salt

INSTRUCTIONS

  • In a blender, combine cashews, ½ cup (45 g) desiccated coconut, honey, lemon zest, and a pinch of salt. Pulse until the mixture is finely chopped.
  • Add coconut milk and baobab powder. Blend again until smooth and creamy, stopping to scrape down the sides if needed.
  • Remove the blade and stir in the remaining desiccated coconut, saving a little for rolling later. Chill the mixture in the fridge for 5–10 minutes so it firms up slightly.
  • Scoop about 2 teaspoons of the mixture for each bite and roll into balls. You should get around 27 bites.
  • Roll each ball in the reserved coconut until fully coated. Refrigerate for 15–20 minutes if you want them to firm up before serving.

NOTES

Taste and adjust the sweetness with more honey, maple syrup, or a few dates—or skip the sweetener altogether and replace it with dates. 
If the mix is too dry, add a splash of coconut milk; if too sticky, stir in extra coconut.
Stir in the last bit of coconut by hand to avoid overworking your blender.
Chill the mixture for 10–15 minutes if it’s too soft to roll.
Swap cashews for hazelnuts, almonds, or macadamias for a different flavor.
Add chopped candied orange for a sweet, citrusy twist, or dip finished bites in melted white chocolate for a dessert version.
Store in an airtight container in the fridge for up to a week, or freeze for up to 3 months. Let thaw at room temperature before serving.
