We’ve already turned it into a velvety organic baobab juice, a delicious no-churn baobab ice cream, and rich, creamy baobab energy bars with white chocolate. Now, these delicious little bites are here to earn their place in your collection of baobab recipes—and here’s why you’ll love them:

They’re healthy and nutrient-dense. No flour is used in the recipe; they’re completely gluten free and packed with all the goodness of baobab superfruit powder.

A naturally sweetened snack – no refined sugar here. We use honey for a touch of sweetness, but you can skip it or swap in your favorite sweetener.

They’re light and not greasy. Thanks to coconut milk instead of oil, these aren’t as heavy or caloric as your typical bliss balls.

They’re a perfect energy boost. Great as a pre-workout snack or a mid-afternoon treat when you’re craving something sweet but still want to feel good after.

No-baking is needed and they’re effortless to make. Just blend, shape, roll, and enjoy. That’s it.

They’re ready in minutes. From start to finish, you’ll need only about 15 minutes. Bonus: clean-up is a breeze with just a blender and a spoon to wash.

These are travel-friendly snacks. They will hold up beautifully in a jar or snack bag for busy days on the go.

Ingredients you’ll need

BAOBAB PULP POWDER – We used homemade baobab powder from a local market, but any high-quality, natural baobab fruit powder works. The less processed it is, the more nutrients—like vitamin C, antioxidants, and fiber—it will retain.

DESICCATED COCONUT – This soaks up moisture in the mixture and develops an even richer flavor by the next day. Go for organic if possible to avoid added sulfites or preservatives.

CASHEWS – Raw, dried cashews are best to use; they blend into a creamy base and give the bites a smooth texture. Roasted cashews add a deeper flavor but won’t give the same creaminess. You’ll need about 1.5 cups (200 grams).

COCONUT MILK – We swapped coconut oil for coconut milk to make the bites lighter and lower in calories without losing richness.

HONEY – You can replace it with sugar or, for a keto-friendly option, use erythritol or stevia. Or skip it entirely and add a few dates—these will provide natural sweetness.

LEMON ZEST – Freshly grated lemon zest adds brightness and pair perfectly with baobab. Be sure to use an organic, unwaxed lemon for the best flavor and to avoid chemicals in the peel.

A PINCH OF SALT – It won’t make the bites taste salty; it simply deepens natural flavor of all ingredients used and makes them more addictive. Yes, these bites are addictive 🙂

Delicious substitutions and additions

Replace the cashews. Hazelnuts, almonds, or macadamias are all great. Use whatever you have on hand—what matters is getting that creamy texture and rich flavor.

Add a few dates. They’ll naturally sweeten your snacks, help bind everything together, and keep them moist instead of dry or crumbly.

Mix in candied oranges. Chopped pieces of candied oranges add a fruity, sweet-tart pop that pairs perfectly with baobab’s bright flavor.

Dip the bites in white chocolate. This is a match made in heaven. A silky chocolate coating balances the zingy baobab, turning them into an irresistible little dessert.

How to make coconut baobab bites

STEP 1: Prepare your ingredients and a blender.

Add the cashews, ½ cup (45 g) desiccated coconut, honey, 1 teaspoon fresh lemon zest, and a pinch of salt. Pulse a few times until the mixture is finely chopped.

STEP 2: Pour in the coconut milk, add baobab fruit powder and pulse again until you get a smooth, creamy paste. Stop to scrape down the sides of the blender as needed to make sure everything blends evenly.

STEP 3: Remove the blade and stir in the remaining desiccated coconut, saving a little for rolling later. Mix well with a spoon or spatula, then let the mixture rest in the fridge for a few minutes so the coconut can absorb the moisture.

STEP 4: Scoop out about 2 teaspoons of the mixture for each bite and roll into balls. You should get roughly 27 baobab bites from this recipe.

STEP 5: Roll each bite in the reserved desiccated coconut until fully coated.

And that’s it—your delicious coconut baobab bites are ready to snack on!

You can pop them in the fridge for a little while to firm up, which makes them easier to arrange on a plate. But honestly, I couldn’t wait—they disappeared before they even had a chance to set!

Recipe notes and tips

Adjust the sweetness. Taste the mixture before rolling. Add a little more honey or maple syrup if you prefer them sweeter, or skip it entirely, and a few dates instead.

The consistency should be just right. If the mix feels too dry, add a splash of coconut milk or a teaspoon of nut butter. If it’s too sticky, mix in more coconut.

Skip blending at the last step. By this point, the mixture is already thick, and if your blender isn’t very powerful, it’s safer to stir in the coconut by hand. (We’ve burned out a couple of blenders learning this the hard way.)

Chill them before rolling. Pop the mixture in the fridge for 10–15 minutes if it’s too soft to handle.

Storage

You can store these bites in a covered bowl in the fridge, where they’ll keep fresh for up to a week.

To freeze, place them in an airtight container and keep them in the freezer for up to three months. When ready to eat, let them thaw at room temperature and enjoy!

What’s the shelf life of baobab fruit powder?

Baobab powder typically has a shelf life of 18 to 24 months if stored properly away from sunlight and moisture. Once opened, it should be kept in an airtight container. Keep it in a cool, dry spot and tightly sealed.

Can I freeze baobab powder?

Yep, you can freeze baobab powder! Just keep it in an airtight container or freezer bag so it stays dry and doesn’t pick up any smells. Baobab powder can stay in the freezer for up to 2 years if it’s stored properly. Let it come to room temperature before opening to avoid clumping.

How much baobab powder can I eat per day?

Most people can safely enjoy 1–2 tablespoons (about 10–20 grams) of baobab powder per day. That’s plenty to get the benefits without overdoing it. However, in regions where baobab trees grow, locals most often use ten times that amount in juices and traditional dishes—and they seem to have no problems with it.

  • Roll each ball in the reserved coconut until fully coated. Refrigerate for 15–20 minutes if you want them to firm up before serving.

NOTES

Taste and adjust the sweetness with more honey, maple syrup, or a few dates—or skip the sweetener altogether and replace it with dates. 
If the mix is too dry, add a splash of coconut milk; if too sticky, stir in extra coconut.
Stir in the last bit of coconut by hand to avoid overworking your blender.
Chill the mixture for 10–15 minutes if it’s too soft to roll.
Swap cashews for hazelnuts, almonds, or macadamias for a different flavor.
Add chopped candied orange for a sweet, citrusy twist, or dip finished bites in melted white chocolate for a dessert version.
Store in an airtight container in the fridge for up to a week, or freeze for up to 3 months. Let thaw at room temperature before serving.
